In response to a newsletter recipe on Moules, I received this heart-warming message.  ‘We noted your recipe for mussels and tonight was the night. We have had Moules & Frites so many times in France and Belgium, but nothing can compare with your recipe. So original, blending the mussels in with the stock to make such a brilliant base. We cooked it together, but I must admit Jocelyn was an essential partner. Looking forward to having another go at it.’ Tony and Jocelyn Backhouse, Hawthorn, Victoria. August 9th 2021.

‘Hi Tonya, as I mentioned in my text, I had a truly wonderful day and learnt a lot and will definitely be coming back for more! Hi Tonya,  Thank you for sharing the photos!  It’s most appreciated.  We had a wonderful day yesterday!  Regards Louise and Sam Rowe. Sunday 21st May, 2023

This was a very enjoyable ‘hands-on’  experience and one I would certainly recommend to others wishing to enhance their culinary knowledge.

The recipes and instructions were easy to understand, and not outside of our expertise. Tonya was working with us throughout the day, making sure we were comfortable, and helping if we needed additional information or tips. The end result was sensational, made even more so by the camaraderie and enthusiasm of the group of amateur cooks and the wonderful encouragement from Tonya, our Teacher.

We all sat down at Tonya’s beautifully laid dining table, overlooking the Bay, to enjoy our French creations.  There was a sense of achievement evident on all the faces around the table.

The conversation flowed easily, and 3.30pm arrived too soon, heralding the end of this wonderful Red Balloon experience.’ Joy Stratford, 11th December 2014.

‘Dear Tonya, Thank for the class. It was very informative and I am now encouraged to be more adventurous is my cooking. My wife loved the Pear and Walnut salad done with Macadamia Oil. Kind Regards – Barry’. 22nd March 2015.

“I hope this finds you well. We loved your French cooking class last year and have made almost all of the recipes again since.” Simone Lewis, Kew. March 2019.

“Thanks again for another good cooking class. It is always good to pick up new techniques and meet interesting people like Andrew.  The menu selection was good and provided options for cooking duck as well as the desserts. My favourite dishes were the crème brûlée and the duck with cauliflower.  The cooking day was outstanding! Trés Bien!’” Joseph, Glen Waverley, July 2019.

‘I just wanted to thank you again for the fantastic time that we all had yesterday. It really was the perfect way for me to celebrate my 60th with those near and dear to me, and everyone, on leaving us today, has reiterated how much fun they had. Julia also went to the South Melbourne Markets this morning and found one of the salts she used yesterday, so that is in her luggage as well.Cath Della, Sunshine Coast – 26th October, 2019

“Thank you so much for the beautiful experience! It was extremely enjoyable and relaxing. Your kitchen is so well organised, blew me away! I have been raving about the experience to my girlfriends today! My daughter and husband enjoyed the cake and profiteroles very much too.”  Pallavi Kale, Melbourne.  March 2019.

‘Thanks Tonya…it was a totally enjoyable day, even if I learnt absolutely nothing, the fun and the lunch alone you could not have paid for. As it turned out I definitely did learn a lot; French cooking is something I have shied away from because I perceived it too complex. Since Saturday I have cooked Gougeres, made that beautiful salad, made the potato bake (used a brie – not quite as flavoursome) and successfully cooked duck breast last night. Many thanks… I have been boring people senseless about the day.’ Bruce Dickson, Melbourne – Saturday 11th July, 2015

‘Tonya- just a short note to say thanks for today’s great experience at your cooking school. The day was a real education but also a lot of fun. The mix of the group was really interesting with an eclectic background. The food was just lovely and I can’t wait to try some of the dishes that you demonstrated. I’d have no hesitation in highly recommending ‘ Cooking on the Bay’. The day was made even more lovely by your generosity in sharing your delightful home with the group. Regards, Mike’. 07/02/2013

A wonderful day of learning, cooking and sharing with Chef Tonya and her assistant Joan. Cooking on the Bay provided the knowledge to eat and cook well, using fine quality ingredients and flavours to eat healthier. This was followed by a wonderful banquet of the meals that we prepared together. Tonya was very hospitable and inviting. A cozy 3 participants today cooking at her home by the bay. We had some cheese, walnuts and grapes to begin with. Then we made egg and chive mayonnaise with caviar, seed crackers and roasted beetroot, cinnamon and pomegranate dip. The main was a French chicken dish made with onions, leeks, mushrooms and apples. Served with garlic and parsley butter and vegetables on the side. For dessert we had chocolate bark with an orange salad. All enjoyed with a glass of vino and views of the Marina and sea. `”Great learning, delicious dinner, fun time, delightful host/chef, on the harbor – what’s not to like? Tonya is a real pro – she was welcoming, adjusted quickly to our skill and knowledge level, had a keen sense of when to just give a direction and when to demonstrate, maintained a relaxed learning climate and provided material to take home to make home meals easy. It was a thoroughly enjoyable evening, in a lovely home, and we have several new techniques to try and dishes to prepare. Plus, she steered us to a remarkable art show in Melbourne which made our visit all the better. Tonya is a confident and very capable teacher who gave clear instructions and was most encouraging to all members of the class.
The ingredients were carefully prepared and the instructions were clearly stated.
She willingly helped us when we asked but generally gave us freedom to work independently in our pairs.
It was especially enjoyable to sit down and share the beautiful meal which we had prepared. We were able to congratulate each other on our hard work!’

‘Tonya, Just going through all the notes you sent, so helpful. Will be shopping this week and making a couple of things, starting with some butter and labneh!  Sunday, I started re-organising my kitchen to make the cooking process more effective.  I also went through all my cupboards sorting out all my appliances, pots, etc. I have also started making a list of some fresh herbs I’ll get for my garden and checking my kitchen implements, so definitely inspired! 😊 Also, I’m thinking the stocks/sauces/soups would be a good one for me, learning to get more flavour into my meals. I see it’s on in a couple of weeks….Deb’ McDonald, Williamstown, Victoria. September 2022.

In response to my newsletter, Winter, June 2021, I received some lovely thank yous….this was especially nice and so I thought it good to share with you. ‘ Thanks for the recipes Tonya – great ideas for those trying to follow a keto diet.  Elliot mentioned he really likes your recipes too as they are very informative, easy to follow and well written as they clearly show a logic and demonstrate you’ve tested them. My two favourite dishes were the octopus – I would never have been brave enough to cook that on my own and the spaghetti squash – I have always been fascinated by it – both were delicious.

The best thing I learnt was to have a go and not be scared of cooking new things.  The experience was exceptional and I did not want to leave – maybe a part 1 and 2 so that the same people can meet again? Relaxing over lunch on the balcony

From the Italianicious – Cooking with Passion at Kureelpa, On the Ridge Cooking School, Kureelpa, Sunshine Coast Hinterland, Queensland, held on Saturday 18th June, 2022.

Cooking at Kureelpa is always a little different to being in the Cooking on the Bay Kitchen. There are the same ingredients which make the day special – the lovely people who come to cook, the excellent dishes and the results are always delicious food. at Kureelpa there is the addition of a marvellous back-drop of Sunshine Coast blue sky and sunshine, the lush, green Image Flat valley, the Maroochydore and Mooloolaba skylines, the deep blue Coral Sea with a occasional huge, container ship moored off the coast, waiting to get into the Brisbane dock, and there is the Mt Coolum rock peeping out from behind the mountain. We cooked a great Italian Menu including a focaccia toped with braised fennel, toasted fennel seeds, crumbled feta and drizzled with pomegranate molasses, a true delight for the senses and a delicious flavour combination which we all loved! Basil pesto, tomato and anchovy salsa; luscious mushroom risotto, which was also made into arancini balls; our fresh pasta fettucce puttanesca is always amazing with its anchovy, gremolata topping and the dessert finale was a chocolate pastry crostata with the chocolate frangipane filling and raspberry jam served with lashings of whipped cream so sorry there were so few photos taken as we were busy, cooking, talking and eating!

From Sue Robb, Mt Tamborine, Gold Coast Hinterland. ‘I had a marvellous time thanks’!

From Michael Williams, Sandringham, Victoria. Most enjoyable. Lovely food, wine, and people around the dinner table.  Life doesn’t get much better

And to finish a tarta de Santiago with orange juice jelly, whipped cream and a scoop of Tonya’s homemade ice cream. It was a wonderful class last Sunday 8th October, 2023. The group really worked well and the food they cooked was fabulous; plus there were good reviews such as those I have added here…

‘I recently did a one day cooking school, Mediterranean Cooking with a touch of Morocco. I did this with my 89 year old aunt, who is a brilliant cook, and my cousin Julie. There were other students.
We all had an absolutely perfect day, from the welcome coffee (superb!) with a slice of almond ricotta cake, to our final coffee of the day. The food that we cooked, and ate, was unbelievably good, and the ambiance felt like we were in a 5 star restaurant. Tonya has the knack of making even the most complex cooking procedure look easy. I have cooked the entire menu twice now for different groups of friends, to rave reviews. Although I live in Brisbane, I hope to do a new class every time I visit Melbourne. Oh, and the wine was perfectly matched.’ From Sue Robb, Queensland, February 26, 2015

‘There was a full class of 8 students today for Tonya’s Mediterranean feast. Lovely people making lovely morsels of food to share together. From Tonya’s signature focaccia with caramelised onion and olives, to ricotta and feta fritters, to grilled mussels, a baked eggplant cannelloni/ lasagne dish. Dessert was equaling amazing with meringue roulade decorated with grapefruit segments, Turkish delight, pistachios and rose petals and almond shortbread. We were greeted with lemon syrup buttermilk cake and a tea/coffee to start off the day. It’s so pleasant to watch the sun shining over the Marina and the sparkling blue hues of the sea while sipping on a white or red and enjoying the fruits of our labour.’  Anna Xia,  Sunday 8th October, 2023.

Tonya, I can’t tell you how much I enjoyed my time with you and all other attendees.  You were so helpful, patient and calm and a delight to be with.  I was amazed that we got everything done in the time.  I also agree that our chats around the dinner table were such a pleasure.  My husband who had gifted your course to me was thrilled that I had enjoyed it so much and is happy for me to do more courses when perhaps back from our travels.  It is really hard to choose a favourite as both main courses were absolutely delicious as was the cake and I particularly liked the aubergine starter which was unusual but really yummy!  But truly I enjoyed everything!! Thank you also for the additional information you sent today which I know I will find useful.   look forward to meeting you again in the not-too-distant future. Tonya hosted another fabulous culinary odyssey to Morocco this time with tales of her travels and scintillating dishes to whet your tastebuds. Mezze dishes include traditional Moroccan flatbread Barbout dipped in Bessara which is fava bean based and a second dip consisting of roasted beetroot, feta and pomegranate molasses plus honey salted eggplants. Main course was a smashing chicken B’Stilla made from whole chicken cooked in homemade stock with just amazing flavours. To finish we had a chocolate, date and almond torte with homemade bergamot ice cream and slices of cinnamon orange supremes. Tonya is a gracious host who has an eye on all the goings on in the kitchen as each team is tasked with a different set of recipes. We all had a great time with a drop of wine and fab meal to enjoy.’ Anna Xia, Saturday 14 October 2023.

‘Tonya, thanks for all the great tips and recipes.  I enjoyed it so much I hope to book another class soon. Thank you so much for sharing all your knowledge. I know I would never have tried out these recipes if I’d just found them in a recipe book. I was so enthused about trying the recipes at home that yesterday I got my can of beans from the back of the pantry and made the bean dip which disappeared by the end of the day. It was so delicious and had a few family members visit during the day who all loved it. Today I made the chocolate torte and shared it with neighbours, my husband and a daughter who lives near. It was really quite simple and so very good!! Also did the oranges!! So refreshing !! Today I also bought the ingredients to make the chicken pie so that’s tomorrow night’s dinner. With thanks again for all your information and such a lovely Sunday lunch. Kind regards Jenny Winckle.’ Sunday 18th April 2021.  Moroccan Exotic Spices and Flavours of the Medina cooking class.

FRENCH DESSERT CLASS TESTIMONIALS

Carol Ayre

I have always enjoyed the many classes that I have attended in the past. Today’s ‘French Bistro Class” was no exception.
Tonya’s a well informed teacher, with a lot of experience and knowledge. It is obvious, that she is passionate about cooking and loves to share her recipes with her guests.
The day is always fun, especially enjoying the delicious dishes on completion with a glass of wine and beautiful views of the marina.
The ‘recipe booklet’ with many extra special hints is so well written, it makes it so easy to recreate these great desserts at home for your family and friends.
I have actually used many of Tonya’s recipes in the past, my friends are so impressed.
Thanks again for a great day, Tonya. I always learn something new.’ Carol Ayres, Sunday 4th February 2024

Dear Tonya,  Thank you so much for a wonderful day in your home learning to improve my cooking skills.  It was a wonderful experience and you obviously put enormous thought and effort into your sessions.  You make the potentially difficult look easy.  After all, you have the ‘know-how’, and I have come away from today’s class with renewed enthusiasm and confidence to ‘have a go’ at cooking tasks I have previously avoided due to lack of confidence.  Perhaps I now know how to at least try my hand with the recipes (and puff pastry!!) we tried today? Thank you! Best wishes, Michael’. Michael Holmes, Burwood, Vic. French Desserts, Saturday 13th May, 2023

‘Thanks for the great class. Really enjoyed it.  Regards, Nelson N, Croydon, Victoria. French Bistro Classics – Desserts. July 2022.

‘Such nice weather for a super nice French desserts extravaganza. We were served a coronation quiche with some greens just so we ate something as a basis for the waves of dessert offerings to come. Apple tart tatin with Crème Anglaise ice cream, profiteroles filled with crème pâtissière and chocolate sauce, passionfruit soufflé, basque cheesecake and speculoos which are French cinnamon short bread biscuits. Many thanks to Tonya and her assistant Sandra for a wonderful day. You’d be surprised at your own baking and cooking ability. A nice drop of rosé or sparkling certainly livened the atmosphere.’ Anna Xia, Victoria. Sunday 29 October, 2023.

Hi Tonya…I also made chocolate soufflés last night for my family. It was a slightly different recipe, cooked for 25 minutes, but same principles. They were amazing and so simple! Another cooking “mt Everest” conquered. I have promised them a creme caramel next time – just didn’t have time for that yesterday.  Thanks again, Karen’ Cheltenham, Victoria, July 11th 2021.

Dear Tonya, herewith a testimony to your skills….My wife has always been disappointed with restaurants serving up duck a l’orange. But at Tonya’s cooking school ( on a day for teaching how to make a variety of stocks), lunch featured after the lesson. ‘Tonya provided an excellent experience, she was very friendly and generous with her time, and a font of useful cooking knowledge. The cooking location is wonderful and the class was fantastic value for money. I learnt so much about cooking stocks and soups, and can now keep learning at home with the very helpful guide book provided. Can recommend this course to anybody looking to level up in their cooking abilities.

‘It was comfortable and informative. Tonya was great. The food was delicious with leftovers taken home.’ Diane Vickery • July 2022.  Cooking Fundamentals: Stocks, Sauces, Soups

‘The four-course meal we cooked was delicious; I had never made anything like these dishes before.  The roasted tomato soup was my favourite as it was full of flavour and nourishment. The best thing I learnt in the class was that a good stock takes time to make. If you don’t spend the time on making a good stock, then your soups and sauces will be missing their foundation…a wonderful experience. Tonya is just so lovely and welcoming.  The kitchen was easy to work in and the time just flew.  To share the meal we had prepared over a glass of wine was a perfect way to finish an amazing day’. Sue Hamblin, Port Melbourne, 20th October 2019

A class where you will learn invaluable cooking tips. This class wasn’t just about making sauces, soup and stock, there was a delicious 3 course meal that we sat down to eat Tonya’s dishes are always exquisitely served up like you are dining at a fine restaurant with water sceneries. Anna Xia – Cooking Fundamentals Class: Stocks, Sauces, Soups – `We made some beautiful stocks today from chicken to beef to fish and crab which we used to create the sauces for a hearty three course meal. A real delight to the tastebuds. Bring containers to take your stocks home.’ Anna Xia, Saturday 28th October, 2023.
